Rice Pudding

1 cup rice
4 cups milk
8 Tbsp. sugar
1/2 tsp. salt
1 1/2 to 2 envelopes gelatin
2 cups whipped cream, approximately
2 tsp. vanilla
1/2 cup chopped almonds, optional

Cook rice in milk. Add sugar, salt, and dissolved gelatin. Cool. Add whipped cream and vanilia. Put in a bowl and chill unit fairly firm. Serve with cold fruit sauce. (A package of Danish dessert pudding mix makes an excellent sauce.) Sprinkle with nuts.

At Christmas time we place one whole almond in the bowl. The finder of the almond in their serving of dessert wins a prize.
